Well, we don't really do anything too either PowerShell or VMWare. Can you determine why the connection fails?

Finally figured out why it was not behaving - it wanted me to to do the following on my connection code:
$vc_status = Connect-VIServer $vc_server -Credential (Get-Credential)
I still get an extra prompt box you just hit enter through, but at least my code now works. I don't know why it worked before without $vc_status...
